We use the best local and Italian ingredients from small organic and ethical suppliers. Think white truffles from Tuscany, rare red prawns from the Amalfi Coast, Parmigiana-Reggiano from Emilia-Romagna, hand-reared grass fed British beef, free range golden chicken eggs, Cornish caviar, and much more.
